I am going to have a better day today than I did yesterday. I can't handle days like that at work any more.
I am sharing this quote that a guy friend of mine (who has gone through some tough times and prevailed!) shared with me....
"Progress....not perfection" That is so perfect for me right now because I am wearing myself out in this job. I need to realize that my office does not have to be perfect and that we can be successful just making improvements....

Baked Potato Mashed Potatoes
I cant really post a picture of my recipe because I made it up myself. I made Baked Potato Mashed Potatoes the other day......very good.....especially when it is cold!
This recipe will work for two servings (since I cook for two).
Two medium potatoes, cleaned cut into cubes and boiled (I leave the peels on)
Once tender, then drain. I don't really mash them as they are kind of good lumpy and they will get mixed up with everything.
Add salt & pepper as desired (I put a ton of pepper in there)
1 teaspoon of butter
1 tablespoon of sour cream
1 table spoon of bacon bits (I cooked bacon and cut it up)
1 tablespoon of chives (I used fresh chives)
1 tablespoon of cheddar cheese (add this last and let it melt over top)
That's all!

Today.....
I have not really had a good day today at all. I didn't get to eat lunch, work sucked, blah, blah! So, we are going to Red Lobster for dinner...you may say "yuck" but sometimes cheese biscuits make a girl happy! Thank god Friday is almost here!

3 things about me
The first "real" concert I ever went to was Robert Plant. It was the best show! I had gone to some rodeos and crap like that where there were performers. And the Maines Brothers played for us at Monterey our Sophomore year....this was a REAL concert though.
Thanksgiving is my favorite holiday. It used to be because we would go to Santa Fe each year and it smelled like the holidays and it would snow and we had the best food. Lately I have been cooking Thanksgiving which has been good, but I miss Santa Fe.
In 1990, I went on a big trip overseas with my dad (he was on business).
We first went to Saipan (this is Pacific Islands Club where we stayed)....
Then to Guam......
Then, several days to Majuro....and finally back to Hawaii. Hawaii was not that great after going to the other places, but the entire trip was worth it....it was a great experience!

Here comes the snow
I guess we dont really know what to expect...they asaying maybe 6 inches, maybe 12. The AJ said maybe the second most snow for Lubbock ever (really?) We may end up getting nothing (I doubt). Anyways....let's all blog this weekend if we can since we will be SNOWED in!

Skiing in Santa Fe
We went to Santa FE for MLK weekend. Such a great time (so glad the heater worked in the house despite rumors to the contrary).
We went shopping (yes I got four pairs of shoes...I know I dont need them). Ate at our favorite places. We were going to come home Sunday but the roads were too bad. Kenda, did you make it in ok?
I dont know if you can tell by the pictures how much it was snowing. They got 9 inches the day we went (19 for the entire weekend). Some fo the best powder I have skied on in a long time!The town got several inches too so it was interesting getting up and down the driveway.
This is a BIG jacket. It is kind of uncomfortable usually but I was so glad to have it this day!

Week one of the diet!
Week one of the diet has not been so great. My hip hurts bad (sounds like a hypochondriac) so I have not been going to the gym. I have been thinking more about my eating so maybe there is hope. I need some motivation so anything you can throw my way will help. I have 12 pounds to lose. I would like to do that before April (trip to Austin) but have to for sure by this summer (Memorial Day). I go to the trainer again on Tuesday so that should help.
Still motivated though! We'll see!
